been awhile
- 1 tablespoon extra-virgin olive oil
- 2 cups shredded store-bought rotisserie chicken
- 1 cup frozen baby peas
- 1/2 cup chicken broth
- 2 cloves garlic, finely chopped
- Pinch cayenne pepper
- 12 ounces wagon wheels or other short pasta
- 1/2 cup freshly grated Parmesan cheese, plus more for sprinkling
- 1 tablespoon butter
- Salt
- DIRECTIONS:
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken to the skillet and heat through. Stir in the peas, broth, garlic and cayenne and simmer until the broth has reduced slightly, about 2 minutes. Keep warm over low heat.
- Meanwhile, in a large pot of boiling, salted water, cook the pasta for 5 minutes. Drain and add to the chicken. Stir in the 1/2 cup cheese and butter and simmer over medium heat, stirring frequently, until the pasta is al dente, about 3 minutes. Season with salt, if necessary, and serve with additional Parmesan.

cookies and sewing
Yield: 2 dozen cookies
1 bag (11.5 oz.) Ghirardelli 60% Cacao Bittersweet Chocolate Chips
6 Tbsp. (3/4 stick) unsalted butter
3 eggs
1 cup sugar
1/3 cup all-purpose flour
½ tsp. baking powder
1 bag (12 oz.) Ghirardelli Semi-Sweet Chocolate Chips
1 cup (4 oz.) chopped walnuts
-In double boiler over hot water, melt the bittersweet chocolate chips and butter. In large bowl with electric mixer, beat eggs and sugar until think; stir in chocolate mixture. In small bowl, stir together flour and baking powder; stir into chocolate mixture. Gently mix in semi-sweet chocolate chips and walnuts.
-Using a sheet of plastic wrap, form dough into two logs, each 2 inches in diameter and about 8 inches long. As dough will be very soft, use plastic wrap to hold dough in log shape. Wrap tightly. Refrigerate at least 1 hour or until firm.
-Preheat oven to 365° F. Unwrap dough; with sharp knife, cut into ¾ - inch slices. Place slices 1 ½ inches apart on greased or parchment-lined cookie sheet. Bake 12 to 14 minutes or until shiny crust forms on top but interior is still soft.

just quick
I bought a sewing machine yesterday because after I had bought the fabric I needed and was all excited and ready to get on that project, my mom informs me that our old sewing machine [that she's had since the 60s] now resides on the bottom of Lake Wedowee. Cool.
Sooo she bought a new one just for me! Let's hope I actually enjoy sewing enough to use it, eh?
My first sewing attempt is a bag and a roll-up needle case [both are for knitting/crocheting]

I have the hiccups...
In other news... I finally made the cookies! Well, almost...when I took the dough out of the refrigerator, it was like a block of ice, so I'm letting it sit out in hopes it will return to normal.
Also, I got a haircut sort of. More like a trim and the lady convinced me to get layers, so I did. It really looks exactly the same just minus the split ends and whatnot.
Perhaps most exciting, I finished the scarf I had been crocheting and it turned out quite well:
I just used a simple single stitch for the whole thing and just guessed on the tassels (you know, trial and error...) and a dark purple soft yarn. Next, I'd like to try different styles of stitching, both crochet and knitting, and would like to tackle a hat project.
I didn't feel like putting make up on, so thats why my head is cut off :P and notice how my hair looks pretty much the same.
So yea, if anyone out there is reading this and is interested in a handmade scarf, let me know what color [be as specific as possible] and I will be happy to make one for you :]
That's about it. Believe me, I wish everyday I could write something beautiful and profound, but unfortunately, most days this is about all I can muster. Who knows, one day I might surprise myself~
